the perfect chocolate chip cookie. 



Cream 1 c. (room temp) butter, 1 1/2 c. brown sugar and 2 (room temp) eggs together until extremely fluffy.
Once fluffy, top with
2 1/2 c. flour
1 Tbsp. baking powder
1 tsp. baking soda
large pinch of salt (i used sea salt- i like my cookies salty)
1 1/2 tsp. vanilla
1 Tbsp. cornstarch (the secret ingredient!)

Beat until it is well incorporated and becomes thick and creamy. Then mix in 3 cups of semi sweet chips and 2 cups of something crunchy- I used rolled oats, but slightly crushed walnuts would also be amazing.

After everything is mixed together place dough on a lightly floured service and knead it to completely mix everything together- warning this part is totally messy but well worth it. Then pull lemon sized hunks of dough roll into a loose ball and drop on the cookie pan (keeping the dough very tall) you'll fit about 6 cookies per cookie sheet.
Bake 390 degrees for 10 to 12 minuets, until the tips have just turned light golden brown. Remove from cookie sheet, very carefully as they will still be pretty gooey, and place on a cooling rack for a moment and enjoy.
